Sodium Tripolyphosphate, is an inorganic compound, is an amorphous water-soluble linear polyphosphate, often used in food, as water retention agent, quality improver, pH regulator, metal chelating agent.
Pentasodium Triphosphate, commonly referred to as Sodium Tripolyphosphate (STPP), is the pentasodium salt of triphosphoric acid.
It is widely used as a chelating agent, dispersant, and water softener in industrial and food-related applications.

Applications
Sodium tripolyphosphate has excellent properties of chelating hard metal ions, which can eliminate the adverse effects of these metal ions. It has the function of swelling and solubilizing for protein and plays the effect of gelatinization. For fatty substances, it can promote emulsification. It has a dispersive suspension effect on solid particles.
Calcium and magnesium ions in hard water form white complex precipitation with sodium tripolyphosphate. After removing the precipitation, it is soft water.
